How To Make Lamb & Chickpea Fritter Wraps

Ingredients
- 1 lb ground lamb
- 1 cup cooked chickpeas, mashed
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup all-purpose flour
- 2 tbsp olive oil
- 4 large tortillas
- 1 cup plain Greek yogurt
- 1/4 cup chopped cucumber
- 1/4 cup chopped tomatoes
Instructions

In a large bowl, combine ground lamb, mashed chickpeas, parsley, mint, red onion, garlic, cumin, coriander, salt, and black pepper. Mix well.

Shape the mixture into small patties or fritters.

Coat each fritter with flour.

Heat olive oil in a large skillet over medium heat. Cook the fritters for about 3-4 minutes per side, until browned and cooked through.

Warm the tortillas in a dry skillet or oven.

Spread Greek yogurt on each tortilla.
