- 1 pound of mixed vegetables (such as carrots, bell peppers, zucchini, and cherry tomatoes), cut into bite-sized pieces
- 2 tablespoons of olive oil
- 1 tablespoon of fresh thyme leaves
- Salt and pepper, to taste

Preheat oven to 400°F (200°C).

In a large mixing bowl, toss the vegetables with olive oil, thyme, salt, and pepper until well coated.
