How To Make Roasted Root Vegetables Recipe

A hearty mix of seasonal vegetables roasted to crispy perfection.

Ingredients

  • 2 large carrots, sliced
  • 2 parsnips, sliced
  • 1 sweet potato, peeled and diced
  • 1 red onion, sliced
  • 3 cloves of garlic, minced
  • 2 tbsp of olive oil
  • 1 tsp of dried thyme
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F

  2. In a large bowl, mix together carrots, parsnips, sweet potato, red onion, garlic, olive oil, thyme, salt and pepper.

  3. Spread vegetables evenly on a baking sheet

  4. Roast in the oven for 35 minutes until vegetables are tender and golden brown.

  5. Serve hot and enjoy!
