How To Make Farmers Market Restaurant’s Lentil Soup
A hearty and nutritious soup made with lentils and vegetables, perfect for a chilly day.
Serves:
Ingredients
- 1 cup of brown lentils
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 4 cups of vegetable broth
- 1 tsp of cumin
- 1 tsp of smoked paprika
- Salt and pepper, to taste
- 2 tbsp of olive oil
Instructions

Rinse and drain the lentils.

In a large pot, heat the olive oil over medium-high heat.

Add the onion, garlic, carrot, and celery and sauté for 5 minutes.

Add the lentils, vegetable broth, cumin, and smoked paprika to the pot.

Bring to a boil, then reduce heat to low and let simmer for 30 minutes or until lentils are tender.

Season with salt and pepper to taste.
