Serves:

Ingredients

  • 1 cup of brown lentils
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 4 cups of vegetable broth
  • 1 tsp of cumin
  • 1 tsp of smoked paprika
  • Salt and pepper, to taste
  • 2 tbsp of olive oil

Instructions

  1. Rinse and drain the lentils.

  2. In a large pot, heat the olive oil over medium-high heat.

  3. Add the onion, garlic, carrot, and celery and sauté for 5 minutes.

  4. Add the lentils, vegetable broth, cumin, and smoked paprika to the pot.

  5. Bring to a boil, then reduce heat to low and let simmer for 30 minutes or until lentils are tender.

  6. Season with salt and pepper to taste.

  7. Serve hot and enjoy!
