Ingredients

  • 1 medium sweet potato, peeled and diced
  • 2 carrots, peeled and chopped
  • 1 apple, peeled, cored, and chopped
  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 tsp turmeric
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion and garlic and sauté until fragrant.

  2. Add the sweet potato, carrot, apple, red lentils, vegetable broth, turmeric, cumin, salt, and pepper.

  3. Bring to a boil, then reduce heat and simmer until the vegetables and lentils are tender, about 20-25 minutes.

  4. Use an immersion blender to blend the soup until smooth and creamy. Alternatively, transfer to a blender and blend in batches.

  5. Taste and adjust seasonings as needed. Serve hot, garnished with fresh cilantro.
