Serves:

Ingredients

  • 4 large potatoes
  • Vegetable oil, for frying
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Peel and wash the potatoes. Cut them into thin slices or use a mandoline to achieve even thickness.

  2. Rinse the sliced potatoes under cold water to remove excess starch. Pat them dry with a paper towel.

  3. Heat vegetable oil in a deep pan or deep-fryer to 350°F (175°C).

  4. Carefully add a handful of potato slices to the hot oil and fry for 5-6 minutes, or until golden and crispy.

  5. Use a slotted spoon to remove the chips from the oil and transfer them to a paper towel-lined plate to drain excess oil.

  6. Season the freshly fried chips with salt and a generous amount of freshly ground black pepper. Toss gently to coat evenly.

  7. Repeat the frying and seasoning process with the remaining potato slices.

  8. Serve the salt and pepper chips hot as a tasty snack or as a side dish with burgers or sandwiches.
