Ingredients
- 1 cup of sage leaves, finely chopped
- 1 leek, white and light green parts only, finely chopped
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of breadcrumbs
- 1/4 cup of grated Parmesan cheese
- 1/4 cup of all-purpose flour
- 2 eggs, beaten
- Salt and black pepper to taste
- Vegetable oil for frying

In a large bowl, combine the chopped sage, leek, onion, and garlic.

Add the breadcrumbs, Parmesan cheese, flour, eggs, salt, and black pepper. Mix well until everything is evenly combined.

Shape the mixture into small balls, about 1 inch in diameter.

Heat vegetable oil in a deep skillet over medium heat.

Fry the sage, leek & onion balls in batches for about 3-4 minutes, until golden brown and crispy. Place them on a paper towel-lined plate to drain excess oil.
