Ingredients

  • 4 large potatoes, peeled and diced
  • 1 bunch of spinach, washed and finely chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them splutter.

  2. Add chopped onions and green chilies. Saute until onions turn golden brown.

  3. Add turmeric powder, red chili powder, and garam masala. Mix well.

  4. Add chopped tomatoes and cook until they turn mushy.

  5. Add diced potatoes and salt. Cook until potatoes are tender.

  6. Add finely chopped spinach and cook for another 5 minutes.

  7. Serve hot with roti or rice.
