Ingredients
- 500g fresh spinach leaves
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 2 green chillies, chopped
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1/2 cup heavy cream
- 2 tbsp ghee or vegetable oil
- Salt, to taste
Instructions

Wash the spinach leaves thoroughly and blanch them in boiling water for 2 minutes. Drain and puree the spinach in a blender.

Heat ghee or oil in a pan, add cumin seeds and let them splutter. Add chopped onions and sauté until translucent.

Add garlic, ginger, and green chillies, and cook for 2 minutes.

Add turmeric powder and garam masala, cook for another minute.

Add the spinach puree and mix well. Cook for 10-15 minutes on low heat, stirring occasionally.

Stir in the heavy cream and season with salt. Cook for an additional 5 minutes.

Serve hot with naan bread or steamed rice.
