Ingredients

  • 500g fresh spinach leaves
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 2 green chillies, chopped
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 cup heavy cream
  • 2 tbsp ghee or vegetable oil
  • Salt, to taste

Instructions

  1. Wash the spinach leaves thoroughly and blanch them in boiling water for 2 minutes. Drain and puree the spinach in a blender.

  2. Heat ghee or oil in a pan, add cumin seeds and let them splutter. Add chopped onions and sauté until translucent.

  3. Add garlic, ginger, and green chillies, and cook for 2 minutes.

  4. Add turmeric powder and garam masala, cook for another minute.

  5. Add the spinach puree and mix well. Cook for 10-15 minutes on low heat, stirring occasionally.

  6. Stir in the heavy cream and season with salt. Cook for an additional 5 minutes.

  7. Serve hot with naan bread or steamed rice.
