How To Make Instant Pot Aloo Gobi Recipe

A classic Indian dish made with potatoes and cauliflower cooked in aromatic spices.

Ingredients

  • 2 tbsp oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 potatoes, peeled and diced
  • 1 head of cauliflower, cut into florets
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/4 cup water
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Set Instant Pot to sauté mode and heat the oil. Add onion, garlic, and ginger and sauté for 2 minutes.

  2. Add potatoes and cauliflower, followed by cumin, coriander, turmeric, salt, and cayenne pepper. Mix well.

  3. Pour in water and deglaze the pot.

  4. Close the lid and set Instant Pot to manual pressure cook on high for 4 minutes.

  5. Once done, quickly release pressure and open the lid.

  6. Garnish with fresh cilantro and serve hot.
