  • 1 small red cabbage, sliced into wedges
  • 2 tablespoons olive oil
  • 2 tablespoons pomegranate molasses
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup pomegranate seeds

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the red cabbage wedges with olive oil, pomegranate molasses, salt, and pepper.

  3. Place the cabbage wedges on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and crispy around the edges.

  4. Once roasted, transfer the cabbage wedges to a serving platter and sprinkle with chopped parsley and pomegranate seeds.
