Ingredients

  • 4 medium potatoes, washed and cut into bite-sized pieces
  • 4 medium carrots, washed and cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the potatoes and carrots with olive oil, garlic powder, rosemary, salt, and black pepper.

  3. Spread the vegetables in a single layer on a baking sheet.

  4. Roast in the preheated oven for 35-40 minutes, or until the potatoes and carrots are golden brown and crispy.

  5. Remove from the oven and serve hot.
