- 4 medium potatoes, washed and cut into bite-sized pieces
- 4 medium carrots, washed and cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the potatoes and carrots with olive oil, garlic powder, rosemary, salt, and black pepper.

Spread the vegetables in a single layer on a baking sheet.

Roast in the preheated oven for 35-40 minutes, or until the potatoes and carrots are golden brown and crispy.
