Ingredients

  • 4 carrots, peeled and sliced into 1-inch pieces
  • 4 potatoes, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large mixing bowl, combine the carrots and potatoes.

  3. Drizzle with olive oil and sprinkle with garlic powder, dried thyme, salt, and black pepper. Toss to coat evenly.

  4. Transfer the vegetables to a baking sheet and spread them out in a single layer.

  5. Roast in the preheated oven for about 25-30 minutes, or until the carrots and potatoes are tender and golden brown, stirring once halfway through.

  6. Remove from the oven and let cool for a few minutes before serving.
