Ingredients
- 1 pound Jerusalem artichokes, scrubbed and halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the Jerusalem artichokes with olive oil, garlic powder, thyme, salt, and pepper until well coated.

Spread the artichokes in a single layer on a baking sheet.

Roast in the preheated oven for 30 minutes, or until the artichokes are tender and golden brown.
