  • 1 pound Jerusalem artichokes, scrubbed and halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the Jerusalem artichokes with olive oil, garlic powder, thyme, salt, and pepper until well coated.

  3. Spread the artichokes in a single layer on a baking sheet.

  4. Roast in the preheated oven for 30 minutes, or until the artichokes are tender and golden brown.

  5. Remove from the oven and garnish with fresh parsley.

  6. Serve hot as a side dish.
