Ingredients

  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 2 teaspoons ground coriander
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Cut the cauliflower into florets and place them in a large bowl.

  3. Drizzle the olive oil over the cauliflower and toss to coat.

  4. Sprinkle the ground coriander, salt, and pepper over the cauliflower and toss again to evenly distribute the seasonings.

  5. Transfer the cauliflower to a baking sheet and spread it out in a single layer.

  6. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.

  7. Remove from the oven and garnish with fresh cilantro.

  8. Serve immediately as a delicious side dish.
