How To Make Spiced Roast Cauliflower with Herby Rice

Ingredients
- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 2 cups cooked rice
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lemon juice
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, combine the cauliflower florets, olive oil, cumin, coriander, turmeric, paprika, salt, and pepper. Toss until the cauliflower is evenly coated.

Spread the cauliflower on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.

In a separate bowl, mix the cooked rice with the chopped parsley, cilantro, and lemon juice. Season with salt and pepper to taste.
