Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 cups cooked rice
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, combine the cauliflower florets, olive oil, cumin, coriander, turmeric, paprika, salt, and pepper. Toss until the cauliflower is evenly coated.

  3. Spread the cauliflower on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.

  4. In a separate bowl, mix the cooked rice with the chopped parsley, cilantro, and lemon juice. Season with salt and pepper to taste.

  5. Serve the spiced roast cauliflower on a bed of herby rice. Enjoy!
