How To Make Spiced Cauliflower with Chickpeas, Herbs & Pine Nuts

Ingredients
- 1 large cauliflower, cut into florets
- 1 can (15 oz) chickpeas, drained and rinsed
- 3 tablespoons olive oil
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional, for extra spice)
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh mint, chopped
- 2 tablespoons fresh parsley, chopped
- 1/4 cup pine nuts, toasted

Preheat the oven to 425°F (220°C).

In a large mixing bowl, combine the cauliflower florets and chickpeas. Drizzle with olive oil and sprinkle with cumin, coriander, turmeric, paprika, cayenne pepper (if using), salt, and pepper. Toss until well coated.

Spread the cauliflower and chickpea mixture in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and golden brown, stirring once halfway through.

Remove from the oven and transfer the roasted cauliflower and chickpeas to a serving dish. Sprinkle with fresh cilantro, mint, parsley, and toasted pine nuts. Serve hot.
