Ingredients

  • 1 pound of carrots, peeled and cut into long strips
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of dried thyme

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the carrot strips with olive oil, salt, black pepper, and dried thyme.

  3. Spread the carrots in a single layer on a baking sheet.

  4. Roast in the preheated oven for 25-30 minutes until the carrots are tender and slightly caramelized.

  5. Serve hot as a side dish.
