Ingredients

  • 1 small head of red cabbage, thinly sliced
  • 1 cup white vinegar
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon whole black peppercorns
  • 1 bay leaf

Instructions

  1. In a large saucepan, combine the white vinegar, apple cider vinegar, water, sugar, salt, peppercorns, and bay leaf. Bring to a boil.

  2. Add the sliced red cabbage to the boiling liquid and cook for 2 minutes.

  3. Remove the saucepan from heat and let the cabbage cool in the liquid.

  4. Once cooled, transfer the pickled cabbage and the liquid into a jar or container with a tight-fitting lid.

  5. Refrigerate for at least 2 hours, or overnight, to allow the flavors to develop.

  6. Serve as a side dish or topping for sandwiches and salads.
