Ingredients

  • 1.5 pounds of baby potatoes
  • 2 tablespoons of olive oil
  • 1/2 cup of grated Parmesan cheese
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried rosemary
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 425°F (220°C).

  2. Cut baby potatoes in half and place them in a large bowl.

  3. Drizzle olive oil over the potatoes and toss to coat evenly.

  4. In a separate bowl, mix Parmesan cheese, garlic powder, rosemary, salt, and black pepper.

  5. Sprinkle the cheese mixture over the potatoes and toss until well coated.

  6. Arrange the potatoes in a single layer on a baking sheet.

  7. Roast in the preheated oven for 35-40 minutes or until golden and crispy.

  8. Garnish with fresh parsley before serving.
