How To Make Parmesan Pesto Roasted Potatoes
Impress your guests with these flavorful roasted potatoes for a side! It’s tossed in a basil pesto, olive oil, and parmesan cheese mix for a richer plate.

- 3lbsred potatoes,quartered, not peeled
- 2tbspolive oil
- 3tbspbasil pesto
- ½tspkosher salt
- â…›tspcracked black pepper
- â…“cupparmesan cheese,fresh, shredded
- Parmesan Cheese,shaved, for garnish, optional
- parsley,chopped, for garnish, optional
Instructions

Preheat the oven to 400 degrees F.

In a large bowl, toss together the oil, basil pesto, Kosher salt, black pepper, and shredded Parmesan Cheese. Mix in the potatoes.

Spread the potatoes onto a baking sheet, then cook for 30 to 35 minutes or until browned.

Remove from the oven, then sprinkle over some shaved Parmesan cheese and parsley.
