- 3lbsred potatoes,quartered, not peeled
- 2tbspolive oil
- 3tbspbasil pesto
- ½tspkosher salt
- ⅛tspcracked black pepper
- ⅓cupparmesan cheese,fresh, shredded
- Parmesan Cheese,shaved, for garnish, optional
- parsley,chopped, for garnish, optional
Instructions

Preheat the oven to 400 degrees F.

In a large bowl, toss together the oil, basil pesto, Kosher salt, black pepper, and shredded Parmesan Cheese. Mix in the potatoes.
