  • 3lbsred potatoes,quartered, not peeled
  • 2tbspolive oil
  • 3tbspbasil pesto
  • ½tspkosher salt
  • tspcracked black pepper
  • cupparmesan cheese,fresh, shredded
  • Parmesan Cheese,shaved, for garnish, optional
  • parsley,chopped, for garnish, optional


  1. Preheat the oven to 400 degrees F.

  2. In a large bowl, toss together the oil, basil pesto, Kosher salt, black pepper, and shredded Parmesan Cheese. Mix in the potatoes.

  3. Spread the potatoes onto a baking sheet, then cook for 30 to 35 minutes or until browned.

  4. Remove from the oven, then sprinkle over some shaved Parmesan cheese and parsley.

  5. Serve warm, and enjoy!
