Ingredients

  • 250g fideos (thin pasta noodles)
  • 400g mixed seafood (shrimp, mussels, squid, etc.)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 tomatoes, diced
  • 1 tsp paprika
  • 1 tsp saffron threads
  • 1 liter fish or vegetable broth
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Heat olive oil in a large paella pan or skillet. Add onions, garlic, and red bell pepper. Sauté until onions are translucent.

  2. Add diced tomatoes and cook until they start to soften.

  3. Stir in paprika and saffron threads, coating the vegetables evenly.

  4. Add the fideos (thin pasta noodles) to the pan and coat them in the vegetable mixture.

  5. Slowly pour in the fish or vegetable broth, stirring gently to combine all the ingredients. Season with salt and pepper.

  6. Simmer for 10-15 minutes, or until the pasta is cooked and the broth has thickened slightly.

  7. While the fideuà is cooking, heat a separate pan with olive oil. Sauté the mixed seafood until cooked through. Season with salt and pepper.

  8. Once the fideuà is cooked, add the cooked seafood to the pan, gently mixing it into the pasta.

  9. Remove from heat and let rest for a few minutes.

  10. Serve the seafood fideuà hot, garnished with fresh parsley and lemon wedges on the side.
