Ingredients

  • 3 cups mixed vegetables (such as broccoli, carrots, cauliflower, zucchini)
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375F.

  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until tender.

  3. Add mixed vegetables and cook until slightly softened.

  4. In a small bowl, whisk together vegetable broth and heavy cream. Pour over the vegetables and stir to combine.

  5. Add Parmesan cheese, salt, and pepper and stir to combine.

  6. Transfer the mixture to a baking dish and sprinkle with additional Parmesan cheese, if desired.

  7. Bake for 25-30 minutes, or until the vegetables are tender and the cheese is melted and golden brown.
