How To Make Mixed Vegetable and Chickpea Stew Recipe
A wholesome and hearty vegetarian stew loaded with vegetables and protein-packed chickpeas.

Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 cup frozen green beans
- 1 (14-ounce) can diced tomatoes
- 2 cups vegetable broth
- 1 (14-ounce) can chickpeas, drained and rinsed
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions

Heat olive oil in a large pot over medium heat and sauté onion until translucent, about 5 minutes.

Add garlic, cumin, smoked paprika, and cinnamon, stir well and cook for another minute.

Add chopped vegetables and stir well to coat in the spice mixture.

Pour in diced tomatoes along with their juice, vegetable broth, and chickpeas. Stir everything together.

Bring the stew to a boil, then reduce the heat to low and simmer for about 20 minutes until vegetables are tender.

Season with salt and pepper and serve hot with chopped fresh parsley on top.
