Ingredients

  • 4 cups fresh corn kernels
  • 2 jalapeno peppers, seeded and diced
  • 2 tbsp butter
  • 1/2 cup heavy cream
  • 1/2 cup grated cheddar cheese
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the jalapeno peppers and cook until softened, about 2 minutes.

  2. Add the corn kernels and cook for another 5 minutes, stirring occasionally.

  3. Stir in the heavy cream and cook for an additional 5 minutes, until the corn is tender and the cream has thickened.

  4. Remove from heat and stir in the grated cheddar cheese until melted. Season with salt and pepper to taste.

  5. Sprinkle with chopped fresh cilantro before serving.
