  • 2 tbsp olive oil
  • 1 lb mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 cups fresh spinach leaves
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add mushrooms and garlic, and sauté until mushrooms are golden brown and tender.

  3. Stir in dried oregano, dried basil, dried thyme, salt, and black pepper.

  4. Add fresh spinach leaves and cook until wilted.

  5. Sprinkle with grated Parmesan cheese and serve hot.
