Ingredients

  • 1 pound of carrots, peeled and cut into sticks
  • 2 tablespoons of olive oil
  • 2 tablespoons of honey
  • 3 cloves of garlic, minced
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the carrots with olive oil, honey, minced garlic, salt, and black pepper until well coated.

  3. Spread the carrots in a single layer on a baking sheet.

  4. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, stirring once halfway through.

  5. Garnish with freshly chopped parsley before serving.
