Ingredients

  • 1 pound of baby carrots
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 cup of vegetable broth
  • 1 tablespoon of honey
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

  2. Add the baby carrots to the skillet and cook for 3-4 minutes, stirring occasionally, until the carrots start to brown.

  3. Pour in the vegetable broth, honey, and balsamic vinegar. Stir to combine.

  4. Reduce the heat to low, cover the skillet, and simmer for 20-25 minutes until the carrots are tender.

  5. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
