Serves:

Ingredients

  • 1 cup of rice
  • 2 cups of spinach, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil
  • 1 tbsp of lemon juice
  • 1 tsp of dried oregano
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 1/2 cup of crumbled feta cheese
  • 2 cups of vegetable broth

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.

  2. Add the rice and stir for 1 minute to coat it with the oil.

  3. Add the vegetable broth, lemon juice, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

  4. Stir in the chopped spinach and cook for an additional 10 minutes, until the rice is cooked and the spinach is wilted.

  5. Remove from heat and let it sit for 5 minutes. Fluff with a fork.

  6. Sprinkle the crumbled feta cheese on top and serve.
