  • 4 large potatoes, peeled and cut into cubes
  • 2 parsnips, peeled and cut into sticks

  • 2 tablespoons of olive oil
  • 1 teaspoon of dried rosemary
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, combine the potatoes, parsnips, minced garlic, olive oil, dried rosemary, salt, and black pepper.

  3. Toss everything together until the vegetables are well coated with the oil and seasonings.

  4. Transfer the mixture to a large baking sheet and spread it out in a single layer.

  5. Roast in the preheated oven for 40-45 minutes, or until the potatoes and parsnips are golden brown and crispy.
