How To Make Minted Courgette Salad

- 4 courgettes
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon honey
- Salt and pepper to taste

Using a mandolin or vegetable peeler, thinly slice the courgettes lengthwise and place them in a large bowl.

In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.

Pour the dressing over the courgettes and toss until well coated.

Add the chopped mint leaves to the bowl and gently mix.
