How To Make Banana Pepper and Quinoa Salad Recipe
A healthy and refreshing salad with the goodness of quinoa and a bit of spice from banana peppers.
Serves:
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese
- 2 banana peppers, sliced
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions

In a medium saucepan, bring quinoa and water to a boil.

Reduce heat to low and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed.

In a large bowl, combine cooked quinoa, red onion, parsley, mint, feta cheese, and banana peppers.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

Drizzle dressing over salad and toss to combine. Serve chilled.
