A healthy and refreshing salad with the goodness of quinoa and a bit of spice from banana peppers.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup crumbled feta cheese
  • 2 banana peppers, sliced
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring quinoa and water to a boil.

  2. Reduce heat to low and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed.

  3. In a large bowl, combine cooked quinoa, red onion, parsley, mint, feta cheese, and banana peppers.

  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

  5. Drizzle dressing over salad and toss to combine. Serve chilled.
