How To Make Anaheim Pepper and Black Bean Dip

A spicy and flavorful dip made with Anaheim peppers and black beans.

Ingredients

  • 1 tablespoon olive oil
  • 2 Anaheim peppers, seeded and chopped
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/4 cup fresh cilantro leaves
  • 2 tablespoons lime juice
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add Anaheim peppers, onion, and garlic. Cook until vegetables are softened.

  2. Add black beans, cilantro, lime juice, and cumin. Stir to combine.

  3. Transfer mixture to a food processor or blender. Pulse until smooth.

  4. Season with salt and pepper to taste.

  5. Serve with tortilla chips or vegetables.
