This chicken is marinated in a zesty mix of Anaheim peppers, lime, and spices for a flavorful and juicy entree.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 Anaheim peppers, seeded and chopped
  • 1/4 cup freshly squeezed lime juice
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. In a blender or food processor, combine chopped Anaheim peppers, lime juice, garlic, smoked paprika, salt, and black pepper. Blend until smooth.

  2. In a large bowl, combine chicken breasts and marinade. Toss until chicken is coated, cover, and refrigerate for at least 1 hour or up to overnight.

  3. When ready to cook, preheat grill to medium-high heat. Remove chicken from marinade, discarding excess marinade.

  4. Grill chicken for 5-7 minutes on each side, or until cooked through and no longer pink in the center.

  5. Let chicken rest for 5 minutes before slicing and serving.
