Ingredients

  • 2 Anaheim peppers, seeded and chopped
  • 1 large avocado, pitted and peeled
  • 1 cucumber, peeled and chopped
  • 2 garlic cloves, chopped
  • 2 cups vegetable broth
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup sliced radish, for garnish

Instructions

  1. In a blender, combine peppers, avocado, cucumber, garlic, broth, lime juice, cumin, salt, and cilantro.

  2. Blend until smooth.

  3. Chill for at least 1 hour.

  4. Pour gazpacho into bowls.

  5. Garnish with sliced radish.
