Ingredients

  • 2 large zucchini, sliced
  • 3 medium potatoes, sliced
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 3 tomatoes, sliced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a baking dish, layer the zucchini, potatoes, onion, garlic, and tomatoes.

  3. Drizzle with olive oil and sprinkle with dried oregano, dried basil, salt, and pepper.

  4. Cover the baking dish with aluminum foil and bake for 45 minutes.

  5. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and lightly browned.

  6. Serve hot as a main course or a side dish.
