  • 2 cups rolled oats
  • 1/2 cup milk
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup dried fruits (optional)
  • 1 ripe banana, mashed
  • 1 egg, beaten
  • 1 teaspoon baking powder
  • 1/2 cup Greek yogurt
  • 1 tablespoon maple syrup (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.

  2. In a large bowl, mix together the oats, milk, honey, vanilla extract, cinnamon, salt, nuts, and dried fruits.

  3. Add in the mashed banana, beaten egg, and baking powder. Mix well.

  4. Pour the mixture into the greased baking dish and spread it evenly.

  5. Bake for 25-30 minutes, or until the edges are golden brown and the center is set.

  6. Serve warm, topped with a dollop of Greek yogurt and a drizzle of maple syrup.
