How To Make Better Beetroot Brownies

Ingredients
- 200g dark chocolate
- 150g beetroot, cooked and pureed
- 100g butter
- 150g sugar
- 2 eggs
- 1 tsp vanilla extract
- 100g all-purpose flour
- 25g cocoa powder
- 1/4 tsp salt
- 50g walnuts, chopped (optional)
Instructions

Preheat the oven to 180°C (350°F) and grease a baking pan.

Melt the dark chocolate and butter in a microwave-safe bowl or using a double boiler.

In a separate bowl, whisk together the sugar, eggs, and vanilla extract until well combined.

Add the pureed beetroot to the sugar mixture and mix well.

Gradually pour the melted chocolate mixture into the beetroot mixture, stirring until smooth.

Sift in the flour, cocoa powder, and salt, and fold gently until just combined.

If desired, fold in the chopped walnuts.

Pour the batter into the prepared baking pan and smooth the top.

Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Do not overbake.

Allow the brownies to cool completely before cutting into squares and serving.
