Ingredients

  • 4 large potatoes, peeled and cut into chunks
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 sprigs of rosemary, leaves removed and chopped
  • 4 cloves of garlic, minced
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Place the potatoes in a large pot of salted water and bring to a boil. Cook for 5 minutes, then drain well.

  3. In a large roasting pan, toss the potatoes with the vegetable oil, salt, black pepper, rosemary, and garlic until well coated.

  4. Spread the potatoes out in a single layer and roast in the preheated oven for 40-45 minutes, or until golden brown and crispy, flipping them halfway through cooking.

  5. Sprinkle with grated Parmesan cheese and roast for an additional 5 minutes, or until the cheese is melted and bubbly.

  6. Remove from the oven and serve hot.
