Ingredients

  • 1.5 kg pork loin
  • 4 tablespoons salt
  • 2 tablespoons vinegar
  • 1 kg potatoes, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a small bowl, mix together the salt and vinegar to create a paste. Rub the paste all over the pork loin.

  3. Place the pork loin in a roasting pan and roast in the preheated oven for 40 minutes.

  4. In the meantime, place the potatoes in a pot of salted water and bring to a boil. Cook for 10 minutes, then drain.

  5. In a separate bowl, mix together the olive oil, dried rosemary, dried thyme, salt, and pepper. Add the drained potatoes to the bowl and toss to coat.

  6. After the pork has cooked for 40 minutes, add the coated potatoes to the roasting pan around the pork loin. Return to the oven and roast for another 20 minutes, or until the pork is cooked through and the potatoes are crispy and golden.

  7. Remove the roast pork and potatoes from the oven and let rest for 10 minutes before slicing.

  8. Serve the sliced roast pork with the crispy potatoes on the side.
