How To Make Roast Chicken with Pancetta & Ricotta Stuffing Balls

Ingredients

  • 1 whole chicken, approximately 4 lbs
  • 4 oz pancetta, finely diced
  • 1 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a medium bowl, mix together the pancetta, ricotta cheese, parmesan cheese, minced garlic, parsley, thyme, rosemary, salt, and black pepper.

  3. Gently loosen the skin of the chicken by inserting your fingers between the skin and the meat, being careful not to tear the skin.

  4. Divide the filling mixture into small balls and place them under the skin of the chicken, distributing them evenly.

  5. Rub the chicken skin with olive oil and sprinkle with salt and pepper.

  6. Place the chicken on a roasting rack in a baking dish or roasting pan.

  7. Roast the chicken in the preheated oven for approximately 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C).

  8. Remove the chicken from the oven and let it rest for 10 minutes before carving.

  9. Serve the roast chicken with the pancetta & ricotta stuffing balls alongside.
