How To Make Scandinavian Roast Turkey with Prune & Juniper Stuffing & Caramelised Apples

Ingredients
- 1 whole turkey (about 12 pounds)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup pitted prunes, chopped
- 1 tablespoon juniper berries, crushed
- 1 cup breadcrumbs
- 2 tablespoons butter
- 4 apples, peeled, cored, and sliced
- 1/4 cup brown sugar
Instructions

Preheat the oven to 350°F (175°C).

Rub the turkey with olive oil and season with salt and pepper.

In a large skillet, sauté the onion and garlic until softened.

Add the prunes and juniper berries and cook for another 2 minutes.

Remove from heat and stir in the breadcrumbs.

Stuff the turkey with the prune and juniper mixture.

Place the stuffed turkey in a roasting pan and roast for about 3 hours or until the internal temperature reaches 165°F (74°C).

While the turkey is roasting, melt the butter in a separate skillet.

Add the sliced apples and brown sugar, and cook until the apples are caramelized.

Serve the roast turkey with the caramelized apples on the side.
