Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red pepper, sliced
  • 1 zucchini, sliced
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, avocado, cilantro

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add ground turkey and cook until browned, breaking it up with a wooden spoon.

  3. Add onions and garlic and cook until onions are soft.

  4. Add red pepper and zucchini and sprinkle with cumin, salt, and pepper.

  5. Cook, stirring occasionally, until veggies are tender and turkey is cooked through.

  6. Serve with optional toppings, if desired.
