  • 8 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 1 pound Brussels sprouts, trimmed and thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons lime juice
  • 1/4 cup chopped peanuts
  • 2 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving
  • Sriracha, for serving

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.

  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the Brussels sprouts and garlic, and cook for 5 minutes until softened.

  3. In a small bowl, whisk together the soy sauce, fish sauce, brown sugar, and lime juice. Pour the sauce over the Brussels sprouts and stir to coat.

  4. Add the cooked rice noodles to the skillet and toss to combine with the sauce and Brussels sprouts. Cook for an additional 2-3 minutes until heated through.

  5. Remove from heat and garnish with chopped peanuts, green onions, and cilantro.

  6. Serve the Brussels Sprouts Pad Thai with lime wedges and Sriracha on the side for extra flavor.
