How To Make Stir-fry Stuffed Omelette

Ingredients
- 8 eggs
- 1 tsp salt
- 1 tbsp vegetable oil
- 1 small onion, finely chopped
- 1 bell pepper, thinly sliced
- 1 cup sliced mushrooms
- 1 cup shredded cabbage
- 1 carrot, grated
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 tsp black pepper
Instructions

In a bowl, whisk together the eggs and salt.

Heat the vegetable oil in a large non-stick skillet over medium heat.

Add the onion, bell pepper, mushrooms, cabbage, carrot, and garlic to the skillet. Stir-fry for 5 minutes until the vegetables are tender.

Remove the vegetables from the skillet and set aside.

Pour half of the beaten eggs into the skillet and swirl to spread evenly. Cook for 1-2 minutes until the bottom is set.

Place half of the stir-fried vegetables on one side of the omelette. Fold the other side over to cover the vegetables.

Cook for another 1-2 minutes until the eggs are cooked through.

Repeat with the remaining eggs and vegetables.

Serve the stir-fry stuffed omelettes hot with soy sauce on the side.
