How To Make Pumpkin, Halloumi & Chilli Omelette

Ingredients
- 6 eggs
- 1 cup pumpkin, diced
- 1 cup halloumi cheese, crumbled
- 1 small red chilli, deseeded and finely chopped
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions

In a mixing bowl, whisk the eggs and season with salt and pepper.

Heat olive oil in a non-stick frying pan over medium heat.

Add the diced pumpkin and cook for 5 minutes until slightly softened.

Add the crumbled halloumi cheese and chilli to the pan and stir for another minute.

Pour the beaten eggs over the pumpkin and halloumi mixture. Cook for about 5 minutes, or until the edges start to set.

Carefully flip the omelette with a spatula and cook for another 5 minutes or until cooked through and golden brown.

Remove from heat and let it rest for a minute before serving.
