How To Make Le Peep’s Spinach and Feta Omelette

Fluffy omelette stuffed with sautéed spinach and tangy feta cheese.

Ingredients

  • 8 eggs
  • 2 tbsp milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp unsalted butter
  • 1 cup packed fresh spinach, chopped
  • 1/2 cup crumbled feta cheese

Instructions

  1. Whisk together eggs, milk, salt, and black pepper in a bowl

  2. In a nonstick skillet over medium heat, melt 1 tablespoon of butter.

  3. Sauté the spinach for 1-2 minutes until wilted.

  4. Pour in half of the egg mixture. As the eggs begin to set, use a spatula to gently lift the edges and let the uncooked eggs flow underneath.

  5. Sprinkle with half of the feta cheese.

  6. Fold the omelette in half, slide onto a plate, and repeat with the remaining ingredients.
