How To Make Le Peep’s Spinach and Feta Omelette
Fluffy omelette stuffed with sautéed spinach and tangy feta cheese.
Serves:
Ingredients
- 8 eggs
- 2 tbsp milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp unsalted butter
- 1 cup packed fresh spinach, chopped
- 1/2 cup crumbled feta cheese
Instructions

Whisk together eggs, milk, salt, and black pepper in a bowl

In a nonstick skillet over medium heat, melt 1 tablespoon of butter.

Sauté the spinach for 1-2 minutes until wilted.

Pour in half of the egg mixture. As the eggs begin to set, use a spatula to gently lift the edges and let the uncooked eggs flow underneath.

Sprinkle with half of the feta cheese.

Fold the omelette in half, slide onto a plate, and repeat with the remaining ingredients.
