Ingredients

  • 500g beef, cut into cubes
  • 2 medium potatoes, peeled and diced
  • 2 ripe bananas, sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp ginger powder
  • 1 can (400ml) coconut milk
  • 1 cup beef broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • for cashew rice:
  • 2 cups cooked rice
  • 1/2 cup cashews, chopped
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add onions and garlic, and sauté until fragrant.

  2. Add beef cubes to the pot and cook until browned on all sides.

  3. Stir in curry powder, turmeric powder, cumin powder, and ginger powder. Cook for 2 minutes to release the flavors.

  4. Add potatoes, coconut milk, and beef broth to the pot. Season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour or until beef is tender.

  5. In a separate pan, heat sesame oil over medium heat. Add cashews and cook until lightly golden. Add cooked rice and soy sauce, and stir-fry for 2-3 minutes.

  6. Add sliced bananas to the curry pot and cook for an additional 5 minutes, until they are heated through but still firm.

  7. Serve the beef, potato & banana curry alongside the cashew rice. Garnish with fresh cilantro.
