Ingredients

  • 2 tbsp coconut oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup sliced mushrooms
  • 2 cups spinach
  • 1 tbsp gluten-free soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat coconut oil in a large skillet over medium-high heat.

  2. Add onion and garlic, and stir-fry for 1-2 minutes.

  3. Add bell peppers and mushrooms, and stir-fry for 3-4 minutes.

  4. Add spinach and continue to stir-fry for another 1-2 minutes.

  5. Add gluten-free soy sauce and sesame oil to the skillet, and stir to combine.

  6. Season with salt and pepper to taste.

  7. Serve hot.
