How To Make Root Vegetable and Ginger Stir-Fry

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 carrots, peeled and julienned
  • 2 parsnips, peeled and julienned
  • 2 turnips, peeled and julienned
  • 1 tsp soy sauce
  • Salt and pepper, to taste

Instructions

  1. Heat the vegetable oil in a wok or large skillet over high heat.

  2. Add the sliced onion, minced garlic, and grated ginger to the pan.

  3. Stir-fry until the onion is translucent, about 2 minutes.

  4. Add the julienned carrots, parsnips, and turnips to the pan.

  5. Stir-fry for an additional 5-7 minutes until the vegetables are tender but still slightly crispy.

  6. Add the soy sauce, and season with salt and pepper to taste.

  7. Serve hot with steamed rice.
